JAN 10, 26.. CHOCOLATE.. GULLIBLE..
NATIONAL TODAY had very few (at least for Patti and I) Holidays of interest. So it was Bittersweet Chocolate or it was nothing.
NATIONAL BITTERSWEET CHOCOLATE DAY..
National Bittersweet Chocolate Day is on January 10 each year.
Chocolate was first discovered by the Aztecs (a powerful Mesoamerican civilization (c. 1300-1521) in central Mexico), who used ground cocoa beans for cooking a bitter beverage. They often cooked it with corn and pepper and gave it a name: ‘xocolatl’. This is the origin of the modern name ‘chocolate’.
When Europeans found the Aztec civilization they were introduced to ‘xocolatl’. However, they did not like the bitter Aztec beverage. They took the cocoa seeds back to Europe and added sugar to the ground cocoa seeds. This gave birth to the chocolate we eat today.
Bittersweet chocolate is made of dark chocolate, which contains 50% to 90% of cocoa, butter, and sugar and does not contain any milk.. The reduction of cocoa and sugar in dark chocolate helps to make bittersweet and semisweet chocolates.
It is a blend of at least 35% cocoa liquor, cocoa butter, and a minimal amount of sugar. It’s the ratio of cacao to sugar that determines whether the chocolate is bittersweet, semi-sweet, or sweetened. Bittersweet, or dark Chocolate is at least 70% cacao.
Bittersweet Chocolate is considered the purest form of chocolate. It is usually used for baking.
Very few people eat bittersweet chocolate directly.

Thanks again, Cap and Patti, for the Journals plug. I will admit it’s been a little difficult to think and write about lovely Botswana when I’m dealing with Minus 30 degrees here at home, all while stuffing the wood stove with firewood every two hours around the clock.
Temps are now above zero, 20 degrees, with some snowfall. So shoveling is the name of today’s game, And NFL playoffs, of course.

If you didn’t watch today’s two playoff games, you probably have all your fingernails.
No we did not watch either game. BUT WE followed both.
No way should the Los Angeles Rams (13 wins 4 loses) have to scramble with a mere six (6) seconds left in the game to win over the Carolina Panthers (8 wins 9 loses) a team with a losing record!
Then the Packers were “running away with their game” leading the Bears at one point 21 – 3 then finding themselves behind late in the 4th quarter trailing, and losing, 27 – 31, with an amazing Bears team scoring 25 points in the 4th quarter. Cap and Patti
